Pani Puri

 Here's a popular food street recipe for Pani Puri:



Ingredients

*For Puri*

1. *2 cups all-purpose flour*

2. *1 teaspoon salt*

3. *1/4 teaspoon baking powder*

4. *1/4 cup ghee or oil*

5. *1/2 cup lukewarm water*


*For Pani (Water)*

1. *1 cup tamarind water*

2. *1 cup green chutney (see below)*

3. *1/2 cup lemon juice*

4. *1/2 cup chaat masala*

5. *1/4 cup cumin powder*

6. *1/4 cup amchur powder (dried mango)*

7. *Salt, to taste*

8. *Ice cubes (optional)*


*For Green Chutney*

1. *1 cup coriander leaves*

2. *1/2 cup green chilies*

3. *1 small onion, finely chopped*

4. *1/2 teaspoon ginger paste*

5. *1 tablespoon lemon juice*

6. *Salt, to taste*


*For Filling*

1. *1 cup boiled and mashed potatoes*

2. *1 cup boiled and mashed chickpeas*

3. *1/2 cup tamarind chutney*

4. *1/4 cup chopped cilantro*

5. *Salt, to taste*


Instructions

*To Make Puri*

1. Mix flour, salt, and baking powder.

2. Add ghee/oil and lukewarm water; knead dough.

3. Rest for 30 minutes.

4. Divide into small balls; flatten.

5. Fry in hot oil until crispy.


*To Make Pani*

1. Mix tamarind water, green chutney, lemon juice, chaat masala, cumin powder, amchur powder, and salt.

2. Chill in refrigerator.


*To Make Green Chutney*

1. Blend coriander leaves, green chilies, onion, ginger paste, lemon juice, and salt.


*To Assemble*

1. Fill puris with mashed potatoes, chickpeas, tamarind chutney, and cilantro.

2. Serve with chilled pani.


Tips

1. Adjust pani's spice level to taste.

2. Use readymade puris or chutneys for convenience.

3. Add other fillings like moong sprouts or crushed papads.
