Malai Boti

 Here's a classic Malai Boti recipe:



Ingredients


_For the Marinade:_

1. 1 cup plain yogurt

2. 2 tablespoons lemon juice

3. 1 teaspoon ginger paste

4. 1 teaspoon garlic paste

5. 1 teaspoon cumin powder

6. 1 teaspoon coriander powder

7. 1/2 teaspoon cayenne pepper (optional)

8. 1/2 teaspoon salt

9. 1/4 teaspoon black pepper

10. 2 tablespoons ghee or oil

11. 2 tablespoons chopped fresh cilantro


_For the Malai Boti:_

1. 1 pound boneless, skinless chicken breast or thighs, cut into 1-inch cubes

2. 1 cup heavy cream

3. 2 tablespoons butter

4. 2 tablespoons all-purpose flour

5. 1 teaspoon garam masala powder

6. 1 teaspoon cardamom powder

7. Salt, to taste

8. Fresh cilantro, for garnish


Instructions

1. _Marinate Chicken:_

    1. In a bowl, mix yogurt, lemon juice, ginger paste, garlic paste, cumin powder, coriander powder, cayenne pepper (if using), salt, and black pepper.

    2. Add chicken; mix well.

    3. Cover; refrigerate 2-3 hours or overnight.

2. _Cook Chicken:_

    1. Heat 1 tablespoon ghee or oil in a large skillet over medium heat.

    2. Remove chicken from marinade; cook until browned and cooked through (6-8 minutes).

3. _Make Malai Sauce:_

    1. In a saucepan, melt butter over medium heat.

    2. Add flour; cook 1 minute.

    3. Gradually add heavy cream; whisk until smooth.

    4. Bring to simmer; cook until thickened (5-7 minutes).

    5. Stir in garam masala powder, cardamom powder, and salt.

4. _Assemble Malai Boti:_

    1. Add cooked chicken to Malai Sauce; mix well.

    2. Simmer 2-3 minutes or until chicken coated in sauce.

    3. Garnish with cilantro.

    4. Serve with naan, parhata, or roti.
