Malai Boti
Ingredients
1. 1 1/2 pounds boneless, skinless chicken breast or thighs, cut into 1 1/2-inch cubes
2. 1/2 cup plain yogurt
3. 2 tablespoons freshly squeezed lemon juice
4. 2 tablespoons ginger paste
5. 2 tablespoons garlic paste
6. 1 teaspoon cumin powder
7. 1 teaspoon coriander powder
8. 1/2 teaspoon turmeric powder
9. 1/2 teaspoon red chili powder
10. 1/2 teaspoon garam masala powder
11. Salt, to taste
12. 2 tablespoons butter or oil
13. 2 tablespoons malai (clotted cream) or heavy cream
14. Chopped corriander, for garnish
1. 1 cup heavy cream
2. 2 tablespoons butter
3. 2 tablespoons all-purpose flour
4. 1 teaspoon cumin powder
5. 1 teaspoon coriander powder
6. Salt, to taste
7. 1/4 teaspoon black pepper
8. 2 tablespoons chopped cilantro
3. *Optional ingredients:*
1. Chutney (e.g., mint, corriander, or tamarind)
2. Naan or paratha bread
3. Sliced onions, cucumbers, and tomatoes
Instructions
1. *Prepare the marinade*: In a blender or food processor, combine yogurt, lemon juice, ginger paste, garlic paste, cumin powder, coriander powder, turmeric powder, red chili powder, garam masala powder, and salt. Blend until smooth.
2. *Marinate the chicken*: In a large bowl, combine the marinade, chicken, and malai (clotted cream). Mix well, cover, and refrigerate for 2-3 hours or overnight.
3. *Preheat the grill or pan*: Preheat a grill or grill pan to medium-high heat (180°C/350°F) or heat 2 tablespoons of oil in a large pan.
4. *Thread the chicken*: Thread marinated chicken onto skewers, leaving a little space between each piece.
5. *Grill the chicken*: Grill for 6-8 minutes per side or cook in a pan for 5-7 minutes per side, until cooked through.
6. *Prepare the malai sauce*: In a saucepan, melt butter over medium heat. Add flour and cook for 1 minute. Gradually add heavy cream, whisking continuously. Add cumin powder, coriander powder, salt, and black pepper. Cook until thickened.
7. *Assemble and serve*: Serve grilled chicken boti with malai sauce, garnished with chopped corriander. Offer chutney, naan/paratha bread, and sliced onions, cucumbers, and tomatoes.
