Dhaba Style Aloo Keema is known for its robust and bold flavors, reflecting the rustic and hearty cooking style of roadside dhabas. The key specialty of this dish lies in its unique blend of tender minced meat (usually beef or mutton) and potatoes, simmered together in a rich, spicy gravy. The spices, including cumin, garam masala, and red chili powder, are used generously, creating a flavorful and aromatic base. A smoky flavor is imparted from slow-cooking over an open flame or in large pots, a hallmark of dhaba-style cooking. The use of ghee or oil enhances the richness, while the soft potatoes absorb the savory gravy, making each bite satisfying. Ingredients:


  • Minced meat (Keema) - 500 grams
  • Oil - 1 cup
  • Onions - 2 medium-sized
  • Ginger garlic paste - 2 tablespoons
  • Tomatoes - 3 large-sized
  • Salt - 1.5 tablespoons
  • Red chili powder - 0.5 tablespoon
  • Green chili powder - 1 teaspoon
  • Coriander powder - 1.5 tablespoons
  • Cumin powder - 1 tablespoon
  • Kasuri methi (dried fenugreek leaves) - 2 tablespoons
  • Green chilies - 6
  • Potatoes - 4 medium-sized
  • Water - 3 cups
  • Fresh coriander (cilantro) - 3 tablespoons



Method:


1. Chop the tomatoes roughly, add a little water, and blend them into a paste. Peel the potatoes and cut one potato into four pieces.



2. Heat 1 cup of oil in a frying pan. Add the onions and sauté them until light brown.



3. Add ginger garlic paste and cook until the aroma of ginger garlic rises. Then add the minced meat (keema) and cook well until the water evaporates.



4. Add the tomato paste, spices, and potatoes. Sauté the mixture well, ensuring the spices are cooked properly. Gradually add water to prevent the meat from sticking to the pan.



5. Add 2 cups of water and let it simmer on low heat until the potatoes are tender.



6. Once the potatoes are cooked, increase the heat and reduce the water. Turn off the heat and sprinkle fresh coriander on top.



7. Serve hot with freshly made roti.
