Aloo Ghosht

 Here's a simple recipe for 




Aloo Gosht (Mutton and Potato Curry):


Ingredients:


*For the Curry:*


1. _Mutton or Lamb_:  half kg, cut into small pieces

2. _Potatoes_: 2-3, peeled and cut into large chunks

3. _Onions_: 2, chopped

4. _Ginger_: 1-inch piece, grated

5. _Garlic_: 3-4 cloves, minced

6. _Tomatoes_: 2, chopped

7. _Red Chili Powder_: 1 teaspoon

8. _Turmeric Powder_: 1 teaspoon

9. _Coriander Powder_: 1 teaspoon

10. _Garam Masala Powder_: 1 teaspoon

11. _Salt_: to taste

12. _Oil or Ghee_: for cooking


*For the Spice Blend:*


1. _Cumin Seeds_: 1 teaspoon

2. _Coriander Seeds_: 1 teaspoon

3. _Fennel Seeds_: 1/2 teaspoon

4. _Cinnamon Stick_: 1-inch piece

5. _Cardamom Pods_: 2-3

6. _Cloves_: 2-3


Instructions:


1. _Prepare the spice blend_: Dry roast the cumin seeds, coriander seeds, fennel seeds, cinnamon stick, cardamom pods, and cloves in a pan over low heat, until fragrant. Grind the roasted spices into a fine powder using a spice grinder or mortar and pestle.

2. _Cook the mutton_: Heat oil or ghee in a large pan over medium heat. Add the chopped onions and cook until they're lightly browned. Add the grated ginger and minced garlic and cook for another minute. Add the mutton pieces and cook until they're browned on all sides.

3. _Add the potatoes and spices_: Add the chopped potatoes, red chili powder, turmeric powder, coriander powder, garam masala powder, and salt to the pan. Mix well.

4. _Add the tomatoes and spice blend_: Add the chopped tomatoes and the prepared spice blend to the pan. Mix well.

5. _Add water and simmer_: Add enough water to the pan to cover the mutton and potatoes. Bring the mixture to a boil, then reduce the heat to low and simmer, covered, until the mutton is tender and the potatoes are cooked through.

6. _Serve_: Serve the Aloo Gosht hot, garnished with fresh ginger and corriander leaves.


Tips:


- Use a pressure cooker to cook the mutton and potatoes faster.

- Adjust the amount of red chili powder to suit your desired level of spiciness.

- Serve the Aloo Gosht with naan, roti, or rice for a delicious and satisfying meal.
